I'm back on weight watchers but this time I'm doing it online. After all the holiday americationing, I needed to do something drastic to feel in control of my health and so I'm attempting to count the points in unidentifiable korean foods and cook at home a bit more. I'm losing weight like a mother so that's good. I guess I just needed to kick start it again. I also discovered something so taste tempting that I think it should be in a book somewhere (or maybe it is and I'm totally behind the curve.)
SWEET POTATO OMLETTE.
So the name is not very catchy, but neither was the mixed berry oatmeal cobbler that I invented last year. It just tells it like it is which I have apparently mastered in the realm of culinary delights but still aspire to in all other parts of my life.
that's eggs, a bit of milk with sweet potatoes (remember my stint as a migrant farmer in September?), red,yellow and green peppers, laughing cow cheese wedges, baby portabella mushrooms sauteed with a dash of olive oil, salt and pepper. Seriously. I dream about eating this everynight. Which is good because it's filling some very yummy craving shoes (no more ttaekbokki on the fly :( ). Who knew?

Oooo...I'm obsessed with sweet potatoes. I use them and squash and pickled red beets as substitute treats when I'm craving chocolate. It works exactly 48% of the time. Thank you for the recipe! Happy weight watching to all of us!
I have been watching it lately too, and I keep getting gifts of Godiva Hot Chocolate! Urh! Sabotage!
I am home all day today with nothing to do, I wish I had a sweet potato in my fridge.
I still have only been to Outback Steakhouse once, and only once, in Seoul! That cracks me up!
